How To: Turkey Chilli Burritos

My boys (big and small) love these burritos. Feeding your husband and children isn't always easy and it's taken me a while to work out how to get my little one to try new foods so that we don't have to live on chicken fingers (not that there is anything wrong with a chicken finger, but any who). Whenever I cook something new I try to serve it with something I know he'll like - basically it has some kind of bread/potato with it. That way I can say - "just try one bite and then you can have another piece of bread/french fry" - it usually works, and usually when he tries things in this way he likes them. All and all, giving him a little bit of the bread/fries helps get all the other really good stuff down, instead of just eating a whole plate of fries and fingers and calling it a night. Camden is a rock star eater (his favorite food is broccoli and 'juice' to him means a kale press juice)...and I know this trick has helped! 

Teaching my family about food, feeding them a balance diet and helping them learn to cook is so important to me. Ever since I saw Jamie Oliver's Food Revolution, my mind has been blown with how serious childhood obesity is in the US, and the horrible food they are accustomed to eating due to fast food chains and most public school cafeterias. His hope is that if children learn about good healthy food and learn to cook we can beat the obesity crisis and keep our children healthy. This isn't about putting kids on diets, it's about teaching them to eat well. Jamie's TED Talk is a must-watch if you have a child or family that you feed!

Now on the the good stuff....

YOU WILL NEED:

Taco Seasoning (you can store buy as well if you don't have time but this recipe is amazing)

1 tbs chili powder

1/4 tsp garlic powder 

1/4 tsp onion powder

1/4 tsp cayenne

1/4 tsp dried oregano

1/2 tsp paprika

2 tsp ground cumin

1 tsp course salt

* Once your cook 1 pound of organic lean ground turkey mix it with a can of green chillies and the above seasonings (or you can use a taco seasoning pouch here). Let simmer to serve warm. 

TO PREPARE YOU NEED:
1 cup of Rice or Quinoa
8 tortilla wraps (corn tortillas if you are gluten free)
1 avocado - cut into chunks
1/2 a tub of cherry tomatoes - cut in half
A small bunch of fresh coriander - chopped
Juice of 1 lime
Some grated cheese
1 cup of plain 0% greek yogurt 
1 batch lettuce shredded

Serves 4-8 (we usually have leftovers to freeze)

Mix together the tomatoes, avocado and coriander and squeeze over the lime to make a little salsa. Warm your tortillas in a dry frying pan. To assemble your burrito pile on a good tablespoon off rice, top with your seasoned turkey meat, sour cream, salsa, lettuce and a sprinkling of cheese.
