Cinnamon Raison Grilled Cheese Sandwich

Nothing's more comforting than a grilled cheese sandwich. I always loved them growing up, and love them now that I can make them for my son! My favorite combination is Gruyère cheese on cinnamon raison bread, as I'm a sucker for anything sweet + savory. I love to slather in ghee and grill on the stovetop till crispy. In honor of today, which is #NationalGrilledCheeseDay, I wanted to share with ya'll this recipe. It's an all around crowd pleaser, and great for a rainy April day!

Here are some tips: use a griddle skillet to cook your sandwich. Also, make sure to let the skillet heat in the oven at 350 for about 10 minutes before moving to stove top!

Here's what you'll need for the Brioche and Chocolate Grilled Cheese Sandwich:

Serves 2 people

4 Slices Gluten Free Cinnamon Raisin Bread (remove crusts, optional)

4oz Gruyere Cheese

2 Tablespoons Ghee (or butter)

Salt and Pepper to taste

Here's how:

Prepare the sandwiches by laying out each slice of bread and spreading 1 tablespoon of ghee in the skillet to melt. Once toasted, add the remaining ghee to the skillet and melt the other sides of the bread (so that bread are toasted side up).

Break up the cheese over the toasted side of bread and season with salt and pepper. Top each of these 2 prepared sandwiches with the remaining slices .

Place the sandwiches in the center of the pan and cook on medium-low until golden brown. Add more ghee to the pan if needed, then flip. Cook the mini sandwiches until both sides are golden brown, and cheese are nice and melty.

Allow to cool slightly before cutting and serving and inhaling these!
